Jewan Manuel, aka Plant Based Papi, launched his movement in 2018–quickly becoming one of Portland’s most beloved chefs, known for plant-based dishes packed with creativity, story, and community.
By 2025, he had built a strong presence through pop-ups, private dinners, and cultural moments that blended food and creativity. He wasn’t starting over, he was stepping into a new era.
That’s when Gloom joined the journey.
